I just started eating eggs at age 40!! My mother used to try to force them down my throat as a kid and the whole experience led to an irrational hatred of eggs. but I chose I had to give them a honest shot in the name of nutrition. Turns out I like them (scrammbled only at this point). I’ve gone from zero eggs for decades to 5-9 a day. The really do kill the appetite in a nice natural sort of way. I’ll be making up for lost decades of egg consumption…trust me. Eggs rule!!!

Portable foods are a must for truck drivers and finding low-carb ones aren’t hard if you know what to get. Try string cheese, pork rinds, pepperoni slices, Atkins bars and shakes, beef sticks and jerky, and baked cheese crisps. If you have a small cooler, you could pack luncheon meats and cheeses, yogurt, hardboiled eggs, etc. Check out CarbSmart dote come for more fantastic low-carb thoughts!

Can’t live without my eggs–cooked in butter, coconut oil, and even lard. SO HEALTHY! ;) The hunger issue is what doomed me on my low-stout diet, too. UGH! Nevermore! I’d like to autograph my book for you, Jodi. Feel free to e-mail me at livinlowcarbman at charter dot net.

Mmmm, eggs!! They are the best part about the low carb way of eating….especially cooked in BUTTER!!!! I beleive the research. I was constantly hungry on the lowfat/high carb diet. That is why I always failed. I despise that hungry feeling. Now I have to remind myself to eat sometimes. Thanks again for the awesome info.

BTW, is there any way I can get my copy of Livin’ La Vida Low Carb signed.

    Take Care,
    Jodi (quest4health)

Hey Mommy826! I wish more nurses and health professionals would have the positive attitude about livin’ la vida low-carb that you do. I too have to keep my carbs pretty low, but eating more fatty foods helps with satiety and gives you the fuel your body needs. I never count calories.

Thanks for the up to date info on eggs! I’m a nurse and boy do I get grief about living lo carb!!!! But it works!!! And despite my slow downs due to my thyroid, I still continue to eat lo carb and not give up. I haven’t been able to find time to exercise this time on atkins (I did fantastic with it before). Should I cut some of the calories I am consuming along with the lo carb, like eat more salad and stuff? I can’t seem to go above 25-30 grams per day.

THANKS Elaine! I saw that study out of Stanford University about Atkins beating all the rest. It was published in the March 2007 issue of the prestigious Journal of the American Medical Association. Wake up people! This is a HEALTHY way to eat and it’s time everyone knows it!

I like Eggs too! The Sept 2007 issue of Scientific American is a special issue : Diet, Health and the Food Supply. On page 66 it has an article stating that Atkins beats Zone, Ornish and US Diet adivce. Atkins had bested the competition. Thank you for another motivating and amusing video, God Bless :O) -Elaine

Welcome to the wonderful world of livin’ la vida low-carb, iluvmy4blessings! It’s the best thing that ever happened to me beside marrying that cute girl sitting beside me in the video. As for fiber, yes I subtract it because your body does not digest it as carbohydrate. THANKS for watching!

Loving your videos. I switched to low carb this week from weight watchers and it has made a huge difference in my cravings.

I want to know if you subtract fiber from carbs to get a carb count. I’ve talked to some who say it hinders their weight loss so they don’t subtract it for counting. Like your input!
